1 (18.25 ounce) package chocolate cake mix (I like the Betty Crocker Dark Chocolate)
1 1/3 cups water
1/2 cup vegetable oil
1 (21 ounce) can cherry pie filling
1 (16 ounce) can vanilla frosting
Pre-heat oven to 350 degrees, use the red foil cupcake liners with your cupcake pans.
In a mixing bowl, combine cake mix, water, oil and eggs; mix well. Spoon batter by 1/4 cupfuls into paper-lined muffin cups. Spoon a rounded teaspoon of pie filling (about 2 cherries and some glaze) onto the center of each cupcake. Bake at 350 degrees F for 20-25 minutes or until a toothpick inserted on an angle toward the center comes out clean. Remove to a wire rack to cool completely.
